BBQ and me!

So we are barbeque-ing this weekend, I am pretty excited about it, because I am going to take all that I know and try to health this situation up!  We are having chicken that we are going to rotisserie our chicken with super yummy lemons and garlic to give it flavor,  healthy baked beans, grilled corn with low fat feta cheese, grilled watermelon salad, and baked onion rings! Can you believe we are going to have all this, I am hoping the meal is going to be yummy, filling but also light... I can't stand feeling bogged down by heavy foods, especially when it is hot.  Do you love onion rings?? well here is my healthy onion ring

1 large vidalia onion cut into 1/4 " slices and rings seperated

panko bread crumbs - ground up a bit in a food processor to make the crumb more fine

1 tsp garlic powder

2 egg whites with 1 T water

1/4 cup whole wheat flour

Take the egg whites and mix in a bowl with water, set aside.  Grind up the panko bread crumbs and put in a bowl, mix in garlic powder and set aside.  Place whole wheat flour in a bowl

take each onion ring and dredge in whole wheat flour, then egg white and then panko mixture. Place in a single layer on a cookie sheet in a 475 degree oven for about 15 minutes or until golden brown. As soon as you pull them out, sprinkle with kosher salt... seriously delish!!

if you want to change things up you can change the garlic powder out for cayenne pepper!
