Ingredients:

1 Box of White Cake –

Cook cake according to the directions.  OR for a lighter version, use an 18.25-oz. box of moist-style yellow cake mix; add 1.5 tsp. baking powder, 2 cups seltzer or vanilla flavored seltzer water (room temperature), 1 tsp. vanilla extract, and 1 cup liquid egg whites or (about 8) raw egg whites

1 container of Lite Cool Whip
1 package of (sugar-free) Red or Blue Jello (or ½ package of each)
1 container of Strawberries
Small container of Blueberries

Directions:

Cook cake and allow to fully cool. When the cake is fully cooled, use a fork, thin knife, or toothpick to poke holes throughout the cake (do not poke all the way through the cake to the bottom of the pan).  Add 1 cup of warm/hot water to the red (and/or blue) jello mix. Pour the jello mixture across the entire cake, hitting all holes. Refrigerate for 2-3 hours until fully cooled and all jello has been absorbed.

Take the cool whip and frost the entire cake before creating an American flag out of sliced strawberries and blueberries. Refrigerate before serving.

This is a delicious, low-cal, 4th of July hit!
