Kale is a green nutrition powerhouse with benefits including the antioxidant vitamins A and C, minerals including calcium, and is a good source of fiber.
I received some kale last week through our work CSA (Community Supported Agriculture) and I wasn't sure what to do with it! I tried sauteeing it with some garlic and olive oil - it turned out to be very tasty!
Satoko suggested I try adding it to a smoothie or making kale chips, so I found this recipe for chips online. Maybe I'll try the smoothie another time!
Ingredients:
1 head of kale, washed & thoroughly dried
2 tablespoons oil
Sea salt, for sprinkling
Directions:
1. Preheat the oven to 275 degrees F.
2. Remove the ribs from the kale and cut into 1 1/2-inch pieces. Lay on a baking sheet and toss with the olive oil and salt. Bake until crisp, turning the leaves halfway through, about 20 minutes. Serve as finger food.
Sounds yummy!
