Arugula, Bell Pepper and Daikon Salad

Serves 4-6


  • 1 ½ T white wine vinegar
  • 1 tsp Dijon mustard
  • 6 C arugula (or your favorite salad greens), rinsed well and spun dry
  • 1 red bell pepper, cut into julienne strips
  • ½ lb daikon radishes, peeled and cut into julienne strips – in case you are wondering a daikon radish is a white radish – you can use red if you prefer! See the photo below…

Directions: In a large bowl, whisk together vinegar and mustard. Add argula, bell peppers, and daikon and toss the salad well.
