Lentil Salad

  • 1 15-oz can lentils, rinsed and drained
  • 2 plum tomatoes, seeded and chopped
  • 1 small cucumber, peeled and chopped
  • 1 T chopped mint
  • 1 T chopped parsley
  • 1 T chopped lemon thyme


  • Lemon juice
  • 1 tsp minced garlic

Directions: In a medium bowl, combine all salad ingredients. Whisk together dressing ingredients and drizzle over lentil mixture, tossing until combined. Garnish with fresh mint leaves.
