Satoko’s Pesto Bean Salad

  • 3 cans of beans – use your favorites (ie: Kidney, Cannellini, Black Bean, Garbanzo, etc)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small bag frozen sweet corn or if you have the time, grill some fresh sweet corn and cut off kernels
  • 1 container grape or cherry tomatoes, halved
  • 1/2 – 1 red onion diced
  • 1 Jalepeno diced – if you want a little heat

Dressing:

  • Chopped cilantro, basil, parsley, garlic – can put in food processor to make a paste
  • 2 Tbsp rice vinegar
  • 1/4 cup of olive oil
  • splash of lime or lemon juice
  • salt and pepper to taste

Mix together and enjoy!!
